He promises to listen to consumers while dissing them for having romanticized views of farmers. The one thing you will never find in his stores are farmers, or indeed anyone who knows much about growing food. He thinks it's 'romantic' that consumers want to reconnect with those who grow their fresh food and spend their food dollar to sustain local farmers. What Mr. Weston offers consumers is cheap food in abundant variety, and that will ensure him a profitable place in the food system for a long time to come. But collectively, we pay a high price for a cheap food system -- just look at the environmental and health care costs; they are skyrocketing.

Well of course Galen Weston is not a fan of the local food movement, he’s built his business by subverting local food and promoting a long-distance commodity food system. Before the consumer's dollar comes the consumers awareness and that takes a lot of everything to change.

It’s too easy to underestimate the power of the consumer dollar on huge corporate structures.
